Plain

Hot

A clear step up. Hot is for people who regularly enjoy spicy food and want the heat to stay present through the meal.

XT-Hot

Serious heat. Cayenne is joined by Trinidad scorpion, ghost pepper, and Carolina Reaper. This is not the level for proving a point on your first visit.

Nuclear

The top of our scale, built for experienced heat seekers. It uses the same family of high-heat peppers and earns its name honestly.

If you are new to Nashville hot chicken, Mild is a useful place to learn the flavor. If you eat spicy food often, Hot may be the better starting point. XT-Hot and Nuclear are deliberate commitments.

Bone-In Chicken or tenders?

Lamon’s serves both Bone-In Chicken and chicken tenders, and Nashville heat works on either. Tenders are easy to share, dip, and compare across heat levels. Bone-in chicken gives you more variation in texture from piece to piece and the classic fried-chicken experience under the Nashville coating.

Our fried foods are cooked in 100% beef tallow. That includes the hand-cut fries, which are finished with a buttery seasoned salt. The result is a crisp, savory base that stands up to Nashville seasoning rather than disappearing underneath it.

The sides are not an afterthought.

Spicy chicken needs more than filler around it. Our mac and cheese starts with a roux, uses seven cheeses, and follows the flavor profile of the Nashville hot seasoning without the cayenne. The mashed potatoes are hand-riced. The vinegar slaw uses a dressing made in our kitchen, giving the plate a bright, crisp counterpoint.

Collard greens cook with ham hock and chicken stock. Vinegar and pepper are already built into the greens, and a cornbread muffin comes with every order. The deviled eggs use mayo, apple cider vinegar, mustard, salt, pepper, garlic, and a little hot sauce, then get a cayenne finish for extra warmth.

That same attention carries beyond chicken. The catfish is Mississippi farm-raised. Pork chops are hand-cut and pounded. Burger sliders are hand-pattied. Loaded Fries start with those hand-cut, beef-tallow fries and add white American cheese sauce made in our kitchen, real bacon, and house ranch.

Ranch, white BBQ, tartar, and Ross Sauce are all made here. Ross Sauce is our kicked-up take on comeback sauce. The tartar sauce is an especially good match for the catfish, while ranch gives hot chicken and loaded fries a cool, familiar landing spot.

Then there is the Frosty side.

“Fried & Frosty” is the whole idea, not two businesses sharing a sign. Both frozen custard flavors are made in our kitchen. You can keep it simple or turn the cold side into a classic or loaded specialty shake. After a Hot, XT-Hot, or Nuclear meal, frozen custard is not a bad next move.
